NEW YORK CULINARY TALENT DONS TOQUE AT BARONA VALLEY RANCH RESORT & CASINO’S NEWEST RESTAURANT

(SAN DIEGO, CA) December 18, 2006 – Barona Valley Ranch Resort & Casino announced the addition of Androssy Escamilla as Chef D’Cuisine for its new casual dining venue, Sage Café.  Escamilla will work with the resort’s executive food and beverage team to oversee menu development, staff training and day-to-day operations for the restaurant.

Escamilla brings over 20 years of culinary experience at several of the country’s most noted restaurants and hotels to Barona Valley Ranch Resort & Casino.  Most recently, he was responsible for the hiring and staff training, and menu and standards development for the grand opening of Island Prime, owned by the Cohn Restaurant Group, as well as for the Marriott Gaslamp Quarter.

Before moving to San Diego, Escamilla honed his culinary skills at prominent restaurants in New York City.  He managed the openings of Balthazar, located in New York’s trendsetting SoHo district, and the critically-acclaimed Cena.  His resume also includes stints behind the stove at the Four Seasons Hotel New York, Rue 57 and Aureole, owned by world-renowned chef Charlie Palmer.  Escamilla trained at the prestigious French Culinary Institute in New York City.

Sage Café features an all-day menu of innovative California cuisine delivered in a casually elegant setting.  The menu features a selection of entrée salads and handcrafted sandwiches, rich home-style entrees and desserts, authentic Asian creations and traditional breakfast favorites.
